Classic Blueberry Muffins with Streusel Topping
Ingredients
- Streusel Topping:
30g low protein flour
15g sugar
15g butter
- Muffin Batter:
160g milk
2 eggs
90g oil
80g sugar
240g low protein flour
30g milk powder
9g baking powder
A handful of blueberries
Directions
- Prepare the Streusel:
Mix flour, sugar, and butter in a small bowl until crumbly. Set aside. - Make the Muffin Batter:
In a large mixing bowl, whisk together milk and eggs until combined.
Gradually add half of the oil, mixing well after each addition until all the oil is incorporated and the mixture is smooth.
Add sugar and continue to whisk until fully combined.
In a separate bowl, mix together flour, milk powder, and baking powder.
Sift the dry ingredients into the wet mixture and gently fold until just combined to form a thick batter. Be careful not to overmix. - Assemble the Muffins:
Line a muffin tray with paper cups. Fill each cup about 50% with batter, then add a few blueberries.
Continue filling the cups to about 90% full, then top each with more blueberries.
Sprinkle the prepared streusel topping over each muffin. - Baking:
Preheat the oven to 180°C (356°F).
Bake the muffins for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
