Ingredients

  • Chocolate Cake Batter:
    – 2 eggs
    – 60g butter
    – 70g sugar
    – 1 teaspoon baking powder
    – 2 tablespoons cocoa powder
    – 80g all-purpose flour

  • Cheesecake Filling:
    – 250g semi-fat cream cheese (or similar)
    – 0.5 tablespoon vanilla pudding mix
    – 1 egg yolk
    – 2 tablespoons powdered sugar
    – A few drops of vanilla extract

Directions

  • Start by taking all the ingredients out of the refrigerator ahead of time to bring them to room temperature. Preheat your oven to 180°C (350°F), setting it to heat from both the top and bottom.
  • For the Chocolate Cake Batter: Begin by creaming the butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. In a separate bowl, combine the flour, cocoa powder, and baking powder. Gradually add the dry ingredients to the butter mixture, mixing until just combined. Use a spatula to gently fold the batter together, ensuring that all ingredients are evenly incorporated.
  • For the Cheesecake Filling: In another bowl, combine the cream cheese, vanilla pudding mix, egg yolk, powdered sugar, and a few drops of vanilla extract. Blend everything together until smooth and creamy.
  • Prepare your silicone cupcake molds by placing a small spoonful of the chocolate cake batter at the bottom of each mold. Next, layer a spoonful of the cheesecake filling on top. Continue alternating layers until the molds are about three-quarters full, with cheesecake filling as the top layer.
  • Place the molds in the preheated oven and bake for about 20 minutes. Check for doneness by inserting a wooden toothpick into the center; if it comes out clean, the cupcakes are done. Allow the cupcakes to cool completely in the molds before removing them.
