These brownies are perfect for Halloween parties, spooky movie nights, or whenever you want to surprise your guests with a unique and fun dessert. The mix of familiar brownies with an unexpected mochi layer makes them a conversation starter at any gathering.

Ingredients

  • 1 box brownie mix (plus ingredients as per the box, with one less egg)

  • 1 egg (use one less than what the box calls for)

  • Oil (as per the box + 1/3 cup extra for a denser brownie)

  • For the Mochi Layer:
  • 3/4 cup glutinous rice flour

  • 3/4 cup water

  • 1/4 cup sugar

  • Red food coloring (enough to achieve a “spooky” red)

Directions

  • Prepare the Brownie Batter:
    – Prepare the brownie mix according to the instructions on the box, but make the following adjustments for a denser and chewier brownie: use one less egg than the box calls for and replace it with an extra 1/3 cup of oil. Mix everything together until well combined and set aside.
  • Make the Mochi:
    – In a microwave-safe bowl, combine the glutinous rice flour, water, sugar, and red food coloring. Mix well until smooth and fully combined.
    – Cover the bowl with plastic wrap and microwave the mixture for 3 minutes. Once done, remove it from the microwave and let it cool for about 5 minutes.
    – Uncover the plastic wrap and stir the mochi dough with a large spoon for around 5 minutes, until it becomes smooth and less sticky.
  • Assemble the Brownies:
    – Preheat the oven according to the directions on your brownie mix.
    – Grease and line a baking tray with parchment paper.
    – Pour half of the brownie batter into the prepared baking tray, spreading it evenly to cover the bottom.
    – Carefully spread the mochi dough over the brownie layer. The mochi dough will be sticky, so work slowly and patiently to cover the brownie batter.
    – Pour the remaining brownie batter on top of the mochi layer, spreading it evenly.
  • Bake:
    – Bake the brownies according to the instructions on the box. Make sure to check for doneness by inserting a toothpick into the center—if it comes out with a few moist crumbs, the brownies are ready.
  • Cool and Serve:.
    – Let the brownies cool completely in the pan before cutting. If you try to cut them too soon, the mochi layer may still be too sticky and difficult to slice neatly.
    – Once cooled, slice the brownies into squares, and enjoy the spooky, chewy treat!
